Chicken & Sausage Wrap In a Bowl

Jump to RecipeYou know I am all for fast fixing dinners. This recipe is full of ingredients that you probably already have on hand in the fridge or pantry. This dish is great to eat during the spring or summer. It is light and refreshing! Plus, its a recipe that can be made ahead of time and re-heated. It’s perfect!
We all love a good sausage wrap- a warm tortilla filled with greasy sausage, grilled vegetables and of course, cheese! This dish is a lighter version of that. I have incorporated a summer bean salad and some grilled chicken making it lower in calories and richer in nutrients.
How To Make Chicken and Sausage Wrap In A Bowl
On medium high heat, cook the sausage until well done ( I usually like to cook it until it gets crispy brown bits on the skin of the sausage).
Once the sausage is fully cooked, remove it from the pan, but do not get rid of the grease in the pan. Once the sausage has cooled, slice it up into small half slices.
Cook the chicken breast in the same pan that you just cooked the sausage in using the leftover grease. Season it with salt and pepper. Cook until juices run clear. Once the chicken is fully cooked, let it rest for 10 minutes before slicing it up.
While the chicken is cooking, assemble your bean salad. Dice up your tomatoes, onions and bell pepper. Cut the corn off of the cob (if you are using frozen corn defrost it until its completely thawed out) and shred lettuce.
Bean Salad: Combine pinto beans, corn and diced up vegetables. Add salt, pepper, white wine vinegar and oil. Mix together well and set aside.
Next, assemble your tortillas into the taco bowls. Let me just say that I absolutely LOVE these taco bowls! My mom gave them to me as a gift one year and they make taco night so fun! My kiddos enjoy them too!
Bake the taco bowls at 350 degrees for about 12-15 minutes or until golden brown. You want your bowl to be able to support your goodies inside of it and you’ll also want it to have a little crunch.
To assemble your bowls, sprinkle in a couple of spoonfuls of the bean salad, chicken, sausage and top it off with shredded cheese. Garnish it with lettuce and serve warm.

Ingredients
- 2 chicken breasts
- 1 link of Kielbasa Sausage
- 4 tortillas
- 1 can pinto beans
- 1 small red onion diced up
- 1/4 cup green onions
- 1/2 cup chopped up bell pepper
- 1 cup freshly diced tomatoes
- 1 cup shredded lettuce
- 1 cup Mexican shredded cheese
- 2 tsp white wine vinegar
- 1 tbsp vegetable oil
- salt & pepper to taste
Instructions
- 1. On medium high heat, cook the sausage until done. Once done, remove it from the pan and slice it up into bite sized pieces. Using the grease from the sausage, cook the 2 chicken breasts on medium/high heat until juices run clear. Season it with salt and pepper and allow it to cool for about 10 minutes before slicing it up.2. To assemble the bean salad, dice up all the vegetables and combine with the pinto beans in a bowl. Add salt, pepper, oil and vinegar and mix well. 3. Place tortillas in the taco bowls and bake 12-15 minutes, or until golden brown.4. Assemble the tortilla bowls with bean salad, sliced up chicken & sausage, shredded cheese and lettuce. 5. Serve warm.
