Red, White and Blue Popsicles

If these awesome fruit popsicles can’t beat the summer heat, nothing can. These are super simple to make and taste so yummy! Plus they are sure to add some patriotic vibes to any American celebration.

Summer is here and Fourth of July is less than a week away! I made these popsicles in celebration of Fourth of July, but they could be used for a Memorial Day celebration or any summer day.

One thing I wanted to make sure with these popsicles was to keep a good balance between a healthy treat and sweet treat. Cold treats during summer time can pack a lot of sugar. So, adding in some fresh fruit to help create the sweetness and good flavor was a must! I also added vanilla greek yogurt for the creamy white layer as a healthier alternative instead of ice cream.

Look at these sweet faces! I think we can all agree that they enjoyed the popsicles. I know I sure did! They each enjoyed two of these popsicles which is an A plus rating in my books. Plus they had lots of red and blue smears on their face to show how much they liked them. Pleasing this crowd of three is my number one priority and I know for sure they would let me know if something wasn’t good…especially something that they consider a treat.

They each helped me make these popsicles and my oldest daughter was a bit skeptical of the flavor of the popsicles when she was making them with me. She said these look “too healthy” haha! I’m not kidding you that she was the first to comment how delicious they were.

How to Make:

This recipe will require a bit of time in the kitchen as far as putting the layers together. The ingredients are EASY to whip up, but you have to freeze each layer at a time before pouring another layer so if you are in hurry then you may want to prepare these a day in advance.

First let’s gather all of the ingredients!

Ingredients:

  • 1 heaping cup of frozen raspberries
  • 1 heaping cup of frozen blueberries
  • Vanilla Greek Yogurt
  • Blue food coloring
  • 1/2 c. of water
  • 1/2 c. of sugar
  • Popsicle molds
  • Popsicle sticks

Directions:

Before you start blending, you have to make the simple syrup. In a saucepan, combine your 1/2 c water and 1/2 c sugar. Stir on medium heat until sugar is dissolved. Set aside to cool.

Next, using your blender, add your one heaping cup of frozen raspberries and add 1/4 cup of the simple syrup. Blend it up until it is mixed well and the fruit is blended smoothly (no chunks). Pour the raspberry mixture into your popsicle mold about a third of the way. Remember you are doing three layers so don’t fill it up too high. You want to keep your layers as even as possible. Clean up the sides of the popsicle mold so when the next layer of white is added no red layer will mix into it. Add you popsicle sticks into the raspberry mixture so it can freeze with this first layer. Pop your mold into the freezer and allow the first layer to set for 2 hours.

Once the two hours has passed, pull your mold back out and pour the next layer-vanilla greek yogurt. Pouring these next two layers can be a bit tricky to keep the popsicle stick clean. So I used a small syringe to help with this. Once the vanilla yogurt has been added, pop the popsicles back in the freezer for this second layer to set for 2 hours.

While the popsicles are setting in the freezer, blend together your last layer. Pour your 1 heaping cup of frozen blueberries into the blender along with the remaining simple syrup and a few drops of blue food coloring (you want to make sure that this layer appears blue rather than purple so the food dye will help with this). Mix it together until it is blended well and using your syringe, add the last layer to your popsicle molds.

Allow the popsicles to set for 2 more hours or overnight. Once your pull your popsicles out of the mold you will see a beautiful looking popsicle with three distinctive layers of red, white and blue. Yum!
