No Yeast Cinnamon Rolls

Who doesn’t like a good cinnamon roll? A warm, sweet rounded piece of bread smothered in cream cheese frosting…what wonderful addition to a cup of coffee. I am going to share with you my favorite cinnamon roll recipe.

We eat these cinnamon rolls only on special occasions-Thanksgiving morning and Christmas morning. We look forward to eating them these times of the year because they are such a special treat. These rolls will sure fill you up and fill a sweet tooth.

The best part about this recipe is that it doesn’t require any yeast. It takes about one hour to make these and there is no time spent waiting for the bread to rise. This is why these are great for those special holiday mornings when you want a special breakfast but don’t want to spend forever in the kitchen.

So how do these cinnamon rolls rise with no yeast? The answer is baking powder. The baking powder allows the rolls to rise as they bake.

How to Make No Yeast Cinnamon Rolls:

Preheat oven to 350 degrees.

In a mixer, combine butter, oil, eggs, sugar, warm milk and salt. Slowly add in the flour and the baking powder. Once the dough has formed into a ball, transfer it onto a lightly floured surface.

Kneed the dough for about a minute and then begin rolling out the dough into a rectangular shape. The dough should be at about 1/4 in thick once rolled out.

How to Make to the filling:

In a bowl, combine 1/3 c. melted butter, 1 c. brown sugar, and 3 tbsp. of cinnamon. Stir until all ingredients are blended together.

Thoroughly spread the filling on the rolled out dough.

Putting it all together:

Roll the dough up jelly roll style. Its should look like a large log. Use a sharp knife (serrated knife works best) to cut as many rolls as you’d like.

I typically end up with 12 rolls to fill a 9 x 13 pan or two 9 inch pie dishes (I usually use these as nice dish for display). It depends on how thick I cut the rolls. * In the picture down below, I made the rolls much smaller for the kid-size portion. Typically I cut the rolls much thicker for giant rolls.

Bake the rolls for about 20-25 minutes until they are golden brown.

How to Make the Frosting:

After the cinnamon rolls have baked and smell like heaven, it is time to frost them! I usually make the frosting while the rolls are baking. Using a whisk attachment in your mixer, whisk together the frosting ingredients.

Once the rolls come out of the oven, allow them to partially cool before frosting them.

No Yeast Cinnamon Rolls

The best homemade no yeast cinnamon rolls. If you like gooey cinnamon rolls, this is your recipe! A sweet roll wrapped in cinnamon and topped with a fluffy cream cheese frosting.

Ingredients
  

Dough

  • 1/3 c softened butter
  • 1 c warm milk
  • 1/2 c granulated sugar
  • 2 eggs
  • 1 tsp salt
  • 2 1/4 tsp baking powder
  • 4 1/4 c all purpose flour

Filling

  • 1/3 c butter (almost melted)
  • 1 c brown sugar
  • 3 tbsp cinnamon

Icing

  • 4 oz softened cream cheese
  • 1/4 c softened butter
  • 1 1/2 c confectioners sugar
  • 1 tsp vanilla extract

Instructions

  • Slowly add in the flour and the baking powder. Once the dough has formed into a ball, transfer it onto a lightly floured surface.
  • Kneed the dough for about a minute and then begin rolling out the dough into a rectangular shape. The dough should be at about 1/4 in thick once rolled out.
  • To make the filling, combine 1/3 c. melted butter, 1 c. brown sugar, and 3 tbsp. of cinnamon. Stir until all ingredients are blended together.
  • Thoroughly spread the filling on the rolled out dough.
  • Roll the dough up jelly roll style. Its should look like a large log. Use a sharp knife (serrated knife works best) to cut as many rolls as you'd like.
  • Bake the rolls for about 20-25 minutes until they are golden brown.
  • While the rolls bake, prepare the icing by beating the butter, cream cheese and vanilla extract, Slowly add in the confectioners sugar scrapping down the sides as needed until it is all well blended.
  • Once the rolls are finished, wait until they are partially cooled before icing the rolls.
